Erwan’s Taiwanese Fried Chicken

Ingredients 

½ kg chicken thigh fillet, cut into chunks

2 eggs

¼ cup water

1 cup potato starch

1 tsp sichuan pepper, freshly ground

2 tsp chili flakes

½ tsp salt

¼ tsp white pepper

fried basil

Marinade

Ingredients 

2 tbsp mirin

1 tbsp soy sauce

½ tsp salt

1 clove garlic, grated

1 thumb ginger, grated

½ tbsp 5 spice

2 tbsp potato starch

 

Abi’s Korean Fried Chicken

Ingredients 

1 lb Chicken Wings

Salt and pepper 

1 cup of cornstarch

½ cup of All Purpose Flour

½ tsp MSG 

1 tsp baking soda

1 cup of water

 

Sauce

Ingredients 

3 cloves of garlic

3 tbsp. Tomato Ketchup 

3 tbsp. Brown sugar 

⅛ cup Soy Sauce

⅛ cup Mirin

2 tsp. White Vinegar

2 tbsp. Gochujang

1 tsp. Sesame Oil

 

Garnish

Ingredients 

1 tsp. Toasted Sesame Seeds for garnish

Chef Martin’s American Fried Chicken 

Ingredients 

Chili Honey

¼ cup honey

1 tsp chili flakes

½ kg chicken thigh fillet

ice water

1 tbsp paprika

1 tsp cayenne pepper

1 tbsp garlic powder

½ tsp white pepper

1 tsp salt
