This shrimp coconut rice dish is a one-pot culinary adventure that’s full of different flavors to experience. You can even add other kinds of veggies to enhance the texture and nutrient content of this quick and comforting dish.
One-Pot Shrimp Coconut Rice
Ingredients
3 tbsp olive oil
¼ kg shrimp, peeled and deveined
2 tsp Maggi Magic Sarap
3 tbsp oil
1 pc red onion, chopped
5 cloves garlic, minced
2 tbsp Maggi Oyster Sauce
2 cups rice
1 tbsp Maggi Magic Sarap
2 cups coconut milk
1 cup water
2 tbsp butter
chopped spring onions
Procedure
In a pot with hot oil, sear the shrimp on both sides for 1 minute and season with magic sarap. Set aside.
In the same pot, add remaining oil and saute onions and garlic. Add Maggi Oyster Sauce and rice followed by Maggi Magic Sarap, coconut milk, and water.
Bring to a boil and simmer, covered, over low heat for 12-15 minutes or until fully-cooked. Add back the shrimp with the butter and fluff. Top with spring onions before serving. Makes 4 servings.
