Pre-Colonial Lambanog Alcohol of the Philippines (Laksoy)

Laksoy is a rare traditional distilled liquor in the Philippines made from Nipa palm sap (Nypa fruticans). We went to Butuan to taste this delicious alcoholic beverage that is a symbol of hard work, camaraderie, and the center of the “tagayan” culture of the province.

The intricate, week-long process, from harvesting, fermentation, to distillation, is seen through the hands of Apang, one of the few remaining Laksoy artisans. With younger generations turning away from this labor-intensive craft, the future of Laksoy is uncertain.
