We are in Dumaguete City, Philippines to try two special dishes: Paklay and Kinilaw na Dungon. Eking Paklayan is a humble food stall owned by Enrique Banua that’s been serving his 25-year-old paklay recipe to the neighborhood until he’s sold out for the day.
What started out as an additional income for his family has now transformed into a local icon that stays true to its simple roots. We also visited Adela Sayre Cual, an inspiring home cook that specializes in her version of delicious kinilaw with dungon.
