Hard Shell Tacos Birria, Spicy Tuna and Chicken Bulgogi with Erwan Heussaff

So we thought, why not make it a thing? 

Hard-shell tacos have already found different forms around the world. Here are three versions that you will love. Birria, Spicy Tuna and Chicken Bulgogi. It’s fusion, but the good kind.

Failed Experiment 

Masa Harina (corn flour)

All purpose flour

Baking powder

Water

Salt

Oil


Substitute:

Whole wheat tortillas



Spicy Tuna Taco 

Dressing:

2 tbsp Japanese mayo

1 tsp Sriracha/Chili garlic

1/2 tsp Sesame Oil 

2 tbsp Soy sauce


250g Tuna Loin


1 bunch Scallions

½ head Cabbage

4 tbsp Japanese sesame dressing

1 Sliced avocados



Birria Taco 

4 Guajilio/poblano/passila dried peppers

2 red Onions

6 pcs Garlic

300g canned whole tomatoes Tomatoes

2 tsp Mexican oregano

1 tsp Cumin powder

1 tsp Ginger powder

1 tsp Garlic powder

1 tsp Onion powder

1 tbsp Apple cider vinegar


400g Brisket beef

2 cups Beef stock

1 cup Cheddar cheese

½ head Lettuce



Chicken Bulgogi Taco 

300g Chicken thighs

Oil


Sauce

1 tbsp Brown sugar

1 tbsp Honey

2 tbsp Soy sauce

1 tbsp Mirin

1 tbsp Grated ginger

1 tbsp Grated garlic


Fried rice

¾ cup Kimchi

1 cup Rice

½ cup Cheddar cheese


Scallion Salad

1 bunch Scallions

½ tsp Sesame oil

1 tsp Gochujaru
