Sinigang is a comforting sour Filipino soup that is a mix of your chosen protein, vegetables, and a souring agent–typically tamarinds. In this video, we explored the variety of methods that you can cook sinigang using other sour ingredients like Biasong, (Citrus hystrix var. micrantha), Batwan (Garcinia binucao), Calamansi, and Kamias (Averrhoa bilimbi, or bilimbi).
Our friends in the food and science community helped us distinguish the differences between the variety of sinigang that we cooked in the kitchen based on the souring agent that we used.
