Brioche Sandwiches (Open Faced, Spam & Egg, Pudding)

3 pc egg yolks
1 tbsp lemon juice
1 tbsp dijon mustard
1-1/2 cups clarified butter salt

Spam and Egg Sandwich
2 pc brioche loaf slices unsalted butter
2 pc eggs
2 slices Spam, caramelized on both sides
1 leaf curly lettuce
2 slices large salad tomatoes

Brioche Bread and Butter Pudding
1/2 cup sugar
3 pc eggs
1 (380g) can condensed milk
1 cup fresh milk
1/2 tsp cinnamon
1/8 tsp nutmeg
4-5 slices brioche loaf, cut into small cubes
