Chopped Chicken Inasal Salad

Love your Inasal BBQ? Have it in a salad! We made a lighter version that your family will love. Don’t forget to baste with annatto oil for that signature golden hue! 

Chicken Inasal is a Filipino grilled chicken dish that is usually marinated in a blend of calamansi, vinegar, garlic, and lemongrass (soda too!). Cooked over a charcoal grill (or on a pan!), this dish achieves a smoky aroma and a beautifully charred exterior. 

CHOPPED CHICKEN INASAL SALAD


Ingredients:
2 ripe mangos, julienned
2 green mangos, julienned
3 tomatoes, julienned
1 large red onion, julienned
1 singkamas, julienned
4 tbsp white sugar
1 lemon, juiced
3 tbsp cilantro, chopped
5 boneless skin-on chicken thigh
2 stalks of lemongrass, crushed
5 garlic, roughly chopped
1 small knob of ginger, roughly chopped
¼ cup calamansi juice
1 pack Maggi Magic Sarap
⅔ cup soy sauce
2 tbsp black pepper, crushed
6 tbsp brown sugar
Procedure:
1. Mix all vegetables together along with the white sugar, lemon juice, cilantro, and then chill.
2. Marinate your chicken in all of the remaining ingredients. Get that perfect sear on your grill or pan.
3. Once cooked, cut your chicken into strips and then place on top of salad.
