Easy Holiday Dinner in Only 3 Hours

Christmas eve is celebrated differently all around the world.

In the Philippines, a feast is prepared and enjoyed by families at midnight.

Roasted Chicken Mushroom and Rice

Ingredients
1 (1.2kg) pc whole chicken, cut along the spine (spatchcocked)
1/2 cup olive oil
1 pc onion, chopped
3 cloves garlic, minced
1 cup shiitake mushrooms, sliced
1 bundle shimeji brown mushroom, bottoms removed and mushrooms separated
2 cups long-grain rice
4-1/2 cups chicken stock/water

Lasagna

Ingredients
3 tbsp olive oil
1 pc onion, chopped
5 cloves garlic, minced
1/2 kg ground beef
3 cups crushed tomatoes
16 pc uncooked lasagna
1 cup cream cheese, softened
2 cups mozzarella

Faux Crème Fraiche

Ingredients
1 tbsp lemon juice
1 cup heavy cream

Green Salad in Caper Vinaigrette 

Ingredients
1 cup cherry tomatoes, halved
1/4 cup parsley
1/2 cup crumbled feta cheese
1/2 cup candied pili nuts or walnuts
2 bundles curly lettuce, cut into bite-sized pieces
2 bundles romaine lettuce, cut into bite-sized pieces

Dressing

Ingredients
1/2 cup extra virgin olive oil
1/4 cup capers
2 tbsp red wine vinegar

Baked Salmon

Ingredients
3-4 kg whole salmon fillet, bones removed
1 cup japanese breadcrumbs
1/4 cup store-bought chimichurri (c/o chingolo)
Topping
2 cups heavy cream
1/2 cup mayonnaise
2 tbsp lemon
1 cup shredded mozarella
2 cloves garlic, finely grated

Apple Crumble

Ingredients
5 pc fuji or red apples, peeled, cored, and sliced.
1/4 cup unsalted butter
1/4 cup brown sugar
1/4 cup white sugar
1 tsp powdered cinnamon
1/2 tsp nutmeg (optional)

Crumble

Ingredients
1-1/2 cups all-purpose flour
1/4 cup brown sugar
1/2 tsp salt
3/4 cup butter, cut into cubes and chilled
1 tbsp cold milk
