Exciting Modern Pinakbet

Pinakbet is a hearty dish served in households and carinderias across the country. Despite originating from the region of Ilocos, there are many twists and variations on the dish depending on where you find it. Either way, it’s a healthy meal that’s perfect for the whole family!

Pinakbet

Ingredients
3 tbsp oil
1 pc small onion, chopped
3 cloves garlic, minced
¼ kg pork belly, cut into ½ inch strips- shrimp
1 tbsp bagoong
½ tbsp Maggi Magic Sarap
2 tbsp Maggi Oyster Sauce
2 cups water
¼ kg squash, peeled and cut into bite-size pieces
6 pcs okra, ends trimmed
½ cup seeded and sliced ampalaya
½ cup sitaw, cut into 2 inch pieces
1 eggplant, cut in half then into 1-½ inch pieces

Procedure
In a pot with hot oil, saute onions and garlic. Add pork belly and cook until browned.

Add bagoong, magic sarap, and oyster sauce followed by water. Bring to a boil and simmer for 10 minutes or until pork is tender. Refill water 1 cup at a time if necessary. 

Add squash, okra, ampalaya, sitaw, and eggplant. Simmer for 5 more minutes or until squash is tender. Makes 5-6 servings
