Crispy Bicol Express
Ingredients
½ kg slab pork belly, skin-on
3 cloves garlic
1 pc onion, quartered
2 pcs bay leaves
1 tbsp peppercorns
1 tbsp Maggi Magic Sarap
Oil for deep-frying
Bicol Express sauce
3 tbsp oil1 pc onion, chopped
3 cloves garlic, minced
3 pcs siling haba, chopped
1 tbsp bagoong
½ tbsp Maggi Magic Sarap
2 cups coconut milk
Procedure
In a pot, combine pork belly, garlic, onion, bay leaves, peppercorns, and magic sarap. Fill it with water until covered by 1 inch and bring to a boil. Simmer for 30 minutes or until tender. Set aside to dry overnight or for at least 4 hours.

In a pot with hot oil, fry your pork belly until the skin is crispy then set aside.

In a pan with hot oil, saute onions, garlic, and sili until tender and fragrant. Add bagoong and magic sarap. Pour in coconut milk and simmer for 3-5 minutes.
