Today, Erwan and Marion Grasby discuss the similarities and differences between a Filipino-Style, a Thai Fried chicken and make their own versions.

Marion’s ingredients:
500g (1 lb) chicken thighs, cut into bite-sized pieces
2 stalks lemongrass, trimmed and cut into roughly 4cm batons
5 garlic cloves
2 coriander (cilantro) roots
2 tsp whole black peppercorns
2 tbsp oyster sauce
1 tbsp fish sauce
1 tsp sugar
2 tbsp corn flour (cornstarch
vegetable oil for deep frying
5 kaffir lime leaves, destemmed and finely sliced
Erwan’s ingredients:
1kg of who chicken thighs and legs
2 tbsp onion powder
2 whole garlic pieces
4 tbsp peppercorns
10 calamansis
1 bottle of ginger beer
2 tsp whole black peppercorns
1 cup flour
1 cup cornstarch
1 tbsp fish sauce
1 tsp garlic powder
Ice cold water
10 pieces cloves of garlic
1/2 cup brown sugar
1/4 cup fish sauce
1/2 cup water
vegetable oil for deep frying
