Roasted
1 whole apahap/sea bass (scales on)
4pcs Garlic
1 bunch Rosemary
1 bunch Thyme
Kosher (ideal size) or Sea salt (enough to cover your fish – about 1.5kg)
2 Egg whites
Extra virgin olive oil

Steamed
1 whole apahap/sea bass (scales removed)
2 thumbs Ginger
Salt and pepper
½ cup of olive oil
2 pcs Kaffir lime leaves
1 bunch Coriander
½ cup sliced Leeks
4 tbsp Soy sauce
2 tbsp Mirin
Fried
1 whole apahap/sea bass (scales removed)
Canola oil (enough to cover)
1 cup Flour
1 cup Cornstarch
1 bunch scallions
3 Red Chilis
2 pcs Kaffir lime leaves
2 stalks Lemongrass
2 thumbs Ginger
6 pcs Garlic
1 bunch Parsley
3 tbsp Light soy sauce
1 tbsp Dark soy sauce
1/4c Shaoxing wine
3 tbsp Palm sugar or coco sugar
