LAVASH
Ingredients:
1/4kg (2-½ cups) bread flour
8.5g (2 tsp) sugar
10g (3-½ tsp) dry yeast
200g (¾ cup) lukewarm water
7g (1 tsp) salt
Procedure:
1. In a bowl, dissolve yeast in water.
2. Combine flour, sugar, and salt. Slowly mix in the water and knead until smooth. Rest for
15 minutes. Portion into balls and rest for another 10 minutes.
3. Flatten into thin discs or ovals and cook in a pan for 1 minute on each side.
Makes 6 servings
Preparation Time: 15 minutes
Cooking/Baking Time: 1 hour
FLAKY FLATBREAD
Ingredients:
360g (3 cups) all-purpose flour
7g (1 tsp) salt
40g (2 tbsp) ghee/vegetable oil
250mL (1 cup) water
¼ cup ghee or oil for cooking
Procedure:
1. In a bowl, combine flour and salt. Combine melted ghee or oil with water and slowly mix
into the flour mixture.
2. Knead until smooth and rest for 15 minutes. Portion into rolls and rest covered for 15
minutes.
3. Flatten into discs and put a slit on the lower half. Roll into a cone and tuck in both
edges. Rest for 10 minutes. Roll into a thin disc and cook in a pan for 1 minute on each
side with ghee.
Makes 6 servings
BATTER-TYPE FLATBREAD
Ingredients:
300g (2 cups) all purpose flour
5g (1 tsp) salt
8.5g (2 tsp) sugar
480ml (2 cups) water
20g (1 tbsp) cooking oil
Procedure:
1. Combine flour, salt, and sugar. Add half of the water. When flour is hydrated, add the
remaining water followed by the oil.
2. In a hot pan lightly oiled, cook at least ⅓ cup of the batter. When both sides are solid,
tap on the center and sides until it puffs up.
