What is Pansit Bato? While it translates to “rock noodles” it is actually named after the small town of Bato, Camarines Sur in Bicol. What is special about Pansit Bato is that the noodles are made with flour which gives it that bouncy texture that goes well with its savory sauce and fresh ingredients.
Declaro’s Pancit Factory sells thousands of noodles per day and is revered by locals and tourists passing through Camarines Sur.
