Let’s make kamote hashbrowns! If you have a surplus of sweet potatoes at home, just grate them and turn them into your favorite breakfast staple. Serve this with eggs or make your own power breakfast combo at home!
KAMOTE HASH BROWNS WITH EGG
Ingredients:
Hash browns:
1 sweet potato large, grated
¼ cup white onion, grated
½ teaspoon paprika
⅛ teaspoon nutmeg
half a pack, Maggi Magic Sarap
¼ cup cornstarch
1 egg yolk
Herb salad:
10g parsley
10g basil
10g coriander
1 tbsp Maggi Savor Calamansi
2 tbsp extra virgin olive oil
2 eggs, fried
Procedure:
1. Peel the sweet potato. Using a box grater, shred the sweet potato & white onion.
2. Stir in the flour, egg and white onions, Maggi Magic Sarap and spices.
3. Heat vegetable oil in a skillet over medium heat. Cook the hash brown patties in small batches until they are golden and crispy (about 3-4 minutes on each side). Transfer to a dry rack and let cool. Makes 2 servings.
