Mango Graham Pancakes

Mango graham…pancakes? Why not! This classic Filipino dessert has been transformed so many times, but it’s always a hit to Pinoys and first-timers!

Tip: We made our pancakes from scratch, but you can also use your go-to instant mix.

MANGO GRAHAM PANCAKES


Ingredients:
1 cup all-purpose flour
2 tablespoons white sugar
¾ tbsp baking powder
¼ tsp baking soda
¼ tsp salt
1 cup milk
1 large egg
2 tablespoons melted butter
1 teaspoon vanilla extract
2 ripe mangoes, peeled, seeded, and cut into cubes
½ cup sugar
Toppings:
1 pack Nestle All Purpose Cream, chilled overnight
1 ripe mango, peeled and diced
1 cup crushed graham crackers
Procedure:
1. Combine all the dry ingredients together. In the center, add all the liquid ingredients and gently mix until there are no lumps. Set aside.
2. Make the mango jam by combining mangoes and sugar in a pot and letting it simmer for 3 minutes or until the mangoes are softened. Set aside and cool completely.
3. In a non-stick pan with melted butter over low heat, cook ⅓ cup of pancake batter. When small bubbles start to burst, flip and cook for 30 seconds. Repeat for the remaining batter.
4. Whip your cream to stiff peaks. Set aside.
5. To assemble, layer one pancake, mango jam, whipped cream, grahams, and another pancake. Top with mango jam, cream, grahams, and mango cubes.
