Ingredients:
1 pc whole chicken, cleaned with innards removed
3 tbsp rock salt
1 bundle leeks
2 4-inch pc ginger, peeled and sliced
1 pc large onion, quartered
2 tbsp sesame oil
Chicken Rice:
2 cups rice, washed
2-½ cups reserved chicken broth
Scallion Sauce:
1 4-inch pc ginger, peeled
¼ cup finely chopped leeks
1 tsp Maggi Magic Sarap
1 tsp salt
2 tsp sugar
¼ cup peanut oil
1 green chili
Hoisin Sauce
1 pc japanese cucumbers, sliced diagonally
Procedure:
Rub the chicken with rock salt until clean and rinse.
Place the chicken in a pot with the leeks, cubes, ginger, and onions. Bring to a boil and lower the heat to its lowest setting. Simmer for 30 minutes, making sure to not bring the broth to a boil.

Place the chicken in an ice water bath and coat with sesame oil once cooled down.
Place the ginger in a blender. Fill with enough water to cover the veggies and blend until fine. Remove moisture by squeezing the ginger in cheesecloth.

Combine ginger, chopped leeks, magic sarap, salt, and sugar. Bring peanut oil until almost smoking point and pour into ginger mixture.

In a pot, bring rice and broth to a boil covered. Bring the heat down to low and cook for 8-10 minutes or until rice is fluffy and fully cooked.
