LEMON PASTA SALAD

Ingredients:

Ideal, cooked according to package directions

¼ cup cherry tomatoes, halved

1 pc small green bell pepper, chopped

¼ cup chopped romaine lettuce

Dressing:

3 tbsp lemon juice

1 tbsp dijon mustard

1 clove garlic, minced

1 tsp lemon zest

5 tbsp extra virgin olive oil

½ tsp salt

¼ tsp pepper

Procedure:

In a bowl, whisk together all the dressing ingredients and set aside.

Combine pasta, tomatoes, bell pepper, and lettuce. Toss in dressing and serve.

Makes 4 servings

SESAME CHICKEN AND PASTA SALAD W/ GINGER DRESSING

Ingredients:

Ideal Farfalle, cooked according to package directions

2-3 pc chicken fillet

½ tsp salt

¼ tsp pepper

2 tbsp olive oil

3 cups chopped romaine lettuce

¼ cup canned mandarin oranges

¼ cup chopped toasted cashews

2 tbsp chopped green onions

fried wonton wrappers cut into strips

Dressing:

1 clove garlic, minced

1 tbsp grated ginger

½ tbsp toasted sesame seeds

2 tbsp sugar

2 tbsp rice vinegar

1 tbsp sesame oil

¼ cup extra virgin olive oil

Procedure:

combine all the dressing ingredients and set aside. Season chicken fillet with salt and pepper then cook. Set aside to cool.

In a bowl, combine pasta, lettuce, oranges, cashews, green onions, fried wrappers, chicken, and dressing.

Makes 4 servings

AVOCADO PESTO PASTA SALAD

Ingredients:

¼ cup corn kernels

2 avocados, pitted and diced

Ideal, cooked according to package directions

Pesto:

1 clove garlic, grated

¼ cup cashews

½ cup basil

¼ cup extra virgin olive oil

3 tbsp shredded parmesan

¼ tsp salt

¼ tsp pepper

Procedure:

In a food processor, blend all the pesto ingredients. Add in the avocados and set aside.

Toss pasta and corn in pesto dressing and serve.

PRAWN PASTA SALAD

Ingredients:

Ideal Penne, cooked according to package directions

½ kg prawns, peeled, deveined with tail

1 pc japanese cucumbers, halved and sliced

1 bundle butterhead lettuce

1 tbsp chopped parsleys

Dressing:

1 cup mayonnaise

1 tsp hot sauce

1 tbsp worcestershire sauce

1 tbsp lemon juice

¼ tsp salt

¼ tsp pepper

Procedure:

Combine all the dressing ingredients and set aside.

In simmering water with salt, cook prawns for 2 minutes and place immediately in an ice-water bath. 

Combine pasta, prawns, cucumber, lettuce, and parsley. Toss in dressing and serve.
