Sweet and Salty Patis Caramel Wings

Whether you have them in a single serving or at an all-you-can eat place, chicken wings are a top-tier finger food. Good on its own or with a side of rice, chicken wings even come in many recognizable flavors.


Patis Caramel Wings


½ kg chicken wings, wing and drumette separated

2 tsp Maggi Magic Sarap

⅛ tsp pepper

1 tbsp calamansi juice

1 cup flour

1 tbsp garlic powder

1 tbsp onion powder

2 tsp paprika

oil for deep frying

Patis Caramel Glaze

3 tbsp oil

2 cloves garlic, grated

2 tbsp brown sugar

½ cup honey

3 tbsp patis


Combine chicken wings, magic sarap, pepper, and calamansi juice. Let it marinate for 10-15 minutes.


Combine flour, garlic powder, onion powder, and paprika in a bowl. Coat each wing with the flour mixture, packing it in to make sure the breading adheres to the skin. Fry each for 3-4 minutes or until golden brown and cooked through. Set aside.

In a pan with hot oil, saute garlic until tender. Add brown sugar and honey. Cook until the sugar has dissolved.

Add patis and toss chicken in the patis glaze. Makes six servings.
