Salmon Curry

SALMON CURRY

Ingredients:
300g salmon fillets, cut into big chunks
1 tbsp cooking oil
1 small (60g) onion, chopped
2pcs (12g) garlic cloves, minced
1pc (12g) thumb-sized piece of ginger, minced
1 tbsp curry powder
1 tsp turmeric powder
1 tsp ground cumin
½ tsp garam masala
½ cup coconut milk
1 tbsp fish sauce
⅓ pack (about 83ml) Nestle All Purpose Cream
1 tbsp lime juice
salt to taste
pepper to taste
2 bird’s eye chillies, chopped (optional, for garnish)
fresh cilantro or parsley (optional, for garnish)

Procedure:
1. Season salmon with salt and pepper. Heat oil in a pan over medium heat and pan-sear salmon for 2-3 minutes until golden. Transfer to a plate and set aside.
2. In the same pan, sauté the onions, garlic, and ginger until they’re soft and fragrant. Stir in the curry powder, turmeric, cumin, and garam masala. Cook for about 1 minute to let the spices bloom.
3. Pour in the coconut milk and fish sauce. Let it simmer for 5 minutes to thicken slightly.
4. Add the salmon chunks back to the pan. Cook for about 3-5 minutes.
5. Lower the heat and stir in the Nestle All Purpose Cream. Cook for another 2 minutes, making sure the sauce is smooth and creamy.
6. Stir in the lime juice and season with salt and pepper to taste.
7. Transfer the salmon curry to a serving dish, garnish with chili and fresh cilantro or parsley. Serve with steamed rice. Makes 3-4 servings.
