Salted Egg Calamari

SALTED EGG CALAMARI

Ingredients:
6 salted egg yolks
½ bar of butter
4 tbsp parsley, chopped
3 tbsp pineapple juice
½ kilo kalamari, cut into rings
1 pack Maggi Magic Sarap
2 tbsp paprika
1 tbsp cumin
1 tsp baking soda
1 egg white
2 cups rice flour
2 cups all purpose flour
oil for frying
1 cup fried basil for garnish
2 red chili, chopped for garnish
Procedure:
1. Melt butter in a pan before mixing in egg yolks, parsley, and pineapple juice.
2. In a bowl add squid, Maggi Magic Sarap, cumin, paprika, baking soda, egg white, ¼ cup each of rice flour and all purpose flour.
3. Mix remaining flour together and dredge calamari before frying until golden brown and then tossing in salted egg sauce.
Tip:
– Make sure squid is cold before frying to make sure it doesn’t overcook
