Salted Egg Noodles

SALTED EGG NOODLES

Ingredients:
¼ kg egg noodles
2 tbsp oil
¼ kg pork liempo, cut into strips
¼ cup lambanog
2 tbsp unsalted butter
2 cloves garlic, minced
1 small onion, chopped
2 salted eggs, mashed
1 cup Nestle all-purpose cream
1 tsp lime zest
½ tbsp Maggi Magic Sarap
chopped green onions (optional, for garnish)
red chili flakes (optional, for garnish)
Procedure:
1. Cook the egg noodles according to the package instructions. Drain and set aside.
2. In a pan, add oil and pork then turn on heat to medium. Cook until fat is rendered and pork is browned. Set aside.
3. In the same pan, add lambanog to deglaze. Add butter in the pan followed by the minced garlic and chopped onion. Sauté until fragrant and translucent.
4. Add the mashed salted eggs to the pan. Stir and cook for 1-2 minutes.
5. Pour in the Nestle All-Purpose Cream and stir well to combine with the salted eggs mixture. Add sugar and lime zest. Let it simmer for about 2-3 minutes until slightly thickened.
6. Season the sauce with Maggi Magic Sarap, adding it gradually to reach your desired level of saltiness. Remember that the salted eggs already contain salt, so adjust accordingly.
7. Add the cooked egg noodles to the pan. Toss well until the noodles are evenly coated with the sauce.
8. Once heated through, remove from heat. Garnish with chopped green onions and red chili flakes if desired.
