SOUR ARROZ CALDO
Ingredients:
1 tbsp cooking oil
4 cloves (16g) garlic, minced
1 pc (100g) medium onion, chopped
1 pc (20g) thumb-sized ginger, sliced
½ kg (500g) chicken thighs
1 cup (200g) glutinous rice, washed and drained
4 cups (1 liter) water
1 pack (22g) Maggi Sinigang sa Sampaloc Mix
1 tbsp Maggi Magic Sarap
2 tbsp Maggi Oyster Sauce
2 tbsp fish sauce
3 tbsp spring onions, chopped, for garnish
2pcs hard-boiled eggs, sliced in half
fried garlic, for topping
3-4 pcs calamansi, sliced in half, for serving
Procedure:
1. Heat oil in a pot, then sauté garlic, onion, and ginger until fragrant. Add chicken and brown on all sides.
2. Stir in glutinous rice and cook briefly to absorb flavors. Pour in water, bring to a boil, then simmer until the rice is cooked and the mixture thickens.
3. Season with fish sauce and stir in Maggi Sinigang Mix, followed by Maggi Oyster Sauce and Magic Sarap. Adjust consistency with water if needed.
4. Serve hot with spring onions, fried garlic, hard-boiled eggs, and calamansi. Makes 4-6 servings.
