Spinach Shakshuka

Pesto shakshuka is THE perfect brunch plate that you need to be making today! Shakshuka is usually made with tomato sauce, but this refreshing twist of pesto adds a summery vibe that pairs well with crusty bread.

SPINACH SHAKSHUKA


Ingredients:
1 kg spinach
¼ cup of butter
3 cloves of garlic, minced
1 tsp salt
1 tsp pepper
¼ cup roasted bell pepper
120 ml Nestle All Purpose Cream
¼ cup parmesan cheese
¼ cup mozzarella
4 medium eggs
¼ cup parsley, chiffonade
¼ cup basil, cut to rustic shapes
⅓ cup fried chickpeas
1 tsp lemon zest
4 pcs sourdough toast
Procedure:
1. Sauté spinach with lots of butter, salt and pepper, once soft add in your minced garlic.
2. In the same pan, add in roasted bell pepper and Nestle All Purpose Cream, slowly simmer for about 1 minute.
3. Add in cheese, then layer your eggs evenly spreading them across each other.
4. Top with more cheese and garnish with herbs, fried chickpeas, and lemon zest.
5. Eat with sourdough or Filipino-style with rice.
