Is This the Best Vinegar in the Philippines? (Sukang Irok Sugar Palm)

In Indang, Cavite, a traditional vinegar called “Sukang Irok” continues to be made from kaong sap. It begins in the Sugar Palm trees, where the sap is harvested and left to ferment slowly over time. What results is a vinegar with a sharp start that softens into a subtle sweetness.
