The Best Traditional Vinegar in the Philippines (Sukang Paombong)

Sukang Paombong is an heirloom vinegar that is produced in Bulacan, Philippines. This tangy-sweet vinegar is tediously handmade by artisans and is fermented in jars for up to 25 days.

We talked to Peter, a “Manunuba” and asked about his experience as a vinegar maker and the challenges that he faces as nipa palm mangroves are gradually being replaced by fishponds in the town of Paombong.
