Taiwanese Beef Noodle Soup
1 – 1.5 lbs. beef shank
green onions
1 yellow onion
2 – 3 carrots
1 tomato
8 cloves garlic
ginger (small 3″” piece)
1/2 tsp. fennel
3 star anise
8 whole cloves
1 tsp. Sichuan peppercorns
1/2 cinnamon stick
3 – 4 dried chilis
Broth Ingredients
6 cups beef stock
6 Tbsp. soy sauce (I’m using 5 Tbsp. light soy sauce, 1 Tbsp. dark soy sauce)
Noodles & other soup ingredients:
noodles
baby bok choy
pickled mustard greens
fresh red chilis
cilantro (garnish)
Filipino Kinalas
4 portions fresh egg noodles
1kg bone in short rib
500g beef brisket
1 tbsp whole peppercorns
2 pcs bay leaves
1 ginger (thumb size slice)
4 cloves of garlic
Sea Salt
2 brown onions
Water to cover
Shrimp Stock
10 prawn or shimp heads
1 whole garlic unpeeled
2 bay leaves
1 brown onion
Salt and pepper
Gravy
2 cups of shrimp stock
3 tbsp flour
2 tbsp butter
1 tbsp fish sauce
2 tbsp pineapple vinegar
4 tbsp hibe, minced
3 cloves garlic, minced
1 red onion, minced
Scallions, chilies and calamansi to serve.
