Tinapa is a special smoked fish that is made in different areas of the country. In Lucena, Quezon Province, Restituto Ferrer and his family have been making Tinapa since 1974 and is regarded as the pioneers of this culinary art form. Making tinapa is a slow and intricate process that requires patience and expertise in order to make a consistently good batch of smoked fish.
