Walnut Honey Shrimp

WALNUT HONEY SHRIMP

Ingredients:
Candied Walnuts:
½ cup (60g) walnut halves, toasted
½ cup (100g) white sugar
½ cup (120g) water
Shrimp:
½ kilo (500g) large shrimp, peeled and deveined
1 sachet Maggi Magic Sarap
2 tbsp rice flour (for shrimp coating)
Batter:
½ cup (120g) carbonated water
½ cup (60g) cornstarch
½ cup (60g) rice flour
2 cups (470g) oil (for frying)
Sauce:
¼ cup kewpie mayonnaise
1 tbsp honey
1 tbsp sweetened condensed milk
1 tsp Maggi Magic Savor (adjust for saltiness)
1 tsp lemon juice
1 tsp sesame oil
1 tsp sesame seeds (for garnish)
1 tbsp spring onion (for garnish)
Procedure:
1. Prepare the candied walnuts. Combine sugar and water in a small saucepan and bring to a boil. Cook for 1-2 minutes until caramelized. Add the walnuts and mix until fully coated. Remove the walnuts and place them on a sheet of parchment paper to cool.
2. Season your shrimp with Maggi Magic Sarap. Coat shrimp with rice flour.
3. In a bowl, mix cornstarch and rice flour. Gradually add the carbonated water, stirring until you get a smooth batter. Add in shrimp and mix until fully coated.
4. Heat oil in a large pot to 175°C (350°F). Fry the shrimp in batches for 2-3 minutes until golden brown and crispy. Drain on paper towels.
5. Prepare the sauce. In a bowl, whisk together the mayonnaise, honey, sweetened condensed milk, Maggi Magic Savor, lemon juice, and sesame oil until smooth. Gently toss the fried shrimp with the sauce until evenly coated. Add the candied walnuts and give it a final toss.
6. Serve over steamed rice or on its own. Garnish with sesame seeds and chopped spring onions. Makes 4 servings.
