We Made A Giant Spanish Bread – Erwan and Martin

Although most of the Philippines’ local panaderias’ special baked wheat goods were brought by the Spaniards during the 1600’s, Spanish bread is something that’s ironically all Filipino.

Even if its name suggests otherwise, this pastry is said to be our own recipe. The name stems from its striking similarity to ensaymada; both of them are made from eggs, butter, and sugar that are all mixed before the baking process.

Spanish bread can be enjoyed at anytime of the day; whether it be during your breakfast paired with coffee early in the morning, alongside a soda to cool off the afternoon heat, or even as a sweet dessert after dinner. The Filipino experience is indeed captured in this tasty bread.

Ingredients:

1/4 kg all-purpose flour

1/4 kg bread flour

1-1/2 tbsp instant yeast

3/4 cup sugar

2 tsp salt

1/4 cup water

2 pc eggs

1/4 cup unsalted butter, cubed


Filling

1/3 cup butter

1/2 cup brown sugar

1/2 cup breadcrumbs

1/4 tsp salt

2 tbsp milk”
