When you think of food in Ilocos, a few classics immediately come to mind: longganisa and bagnet.
In our past episodes, Erwan Heussaff has traveled across Ilocos Sur and Ilocos Norte to discover the region’s food, from freshly fried empanadas, the must-try KBL (kamatis, bagoong, and lasona), traditional pinakbet, and many more local favorites.
Now, we’re back to take a closer look at these Ilocano classics. We learn how the region’s distinct longganisa is made, and try recreating longganisa, crispy bagnet, and miki pancit back in the kitchen studio.
