The Fermented Shrimp Paste of Camarines Norte (Dinailan)

Christian Guevarra has spent almost 21 years fishing and producing dinailan in Barangay Sabang, Vinzons, Camarines Norte, where the seasonal catch of tiny shrimp provides an important source of income for the community.

Dinailan is made by drying alamang, or tiny shrimp. Christian’s family manages four boats, works with local boatmen, and processes their catch at home during the season. Much of the knowledge behind the practice comes from older generations, who learned to understand the sea, the seasons, and when the shrimp are ready to catch.

In this episode, we meet Christian and his family, learn how dinailan is made and cooked, and discover why he hopes younger generations will continue the tradition.
